Pepper is widely grown in the Central Highlands and Southern Vietnam where the climate and lands are suitable for planting horticulture products. Pepper is harvested, then dried in the sun and then packaged and preserved. Processed peppers will have different colors and flavors & here is how we make coarse black pepper.

Black Pepper
To get black pepper, we pick the whole bunch of peppercorns from their branches. The bunch of ripe fruits contains yellow or red seeds, but we still pick whole bunch.
We keep them in about 15 hours to increase the rate of ripening seeds, and improve the nutritional value and delicious taste of seeds.
Then we dry them under the sun and remove impurities; then store the dried pepper in the warehouse. Black pepper after process is about one-third green pepper size.
In order to keep the black pepper to have a nice shade without havin dirt, microorganisms and molds, before drying, the pepper should be washed with boiling water with a little salt for 1-2 minutes.
Afterwards, we drain and proceed them to dry. However, according to my real experience in the local area; most farmers neglect to wash black peppercorns because they want to save some production costs.
Another reason is that the sterilization process can be carried out with fluidized bed dryer with advanced technology after drying in the farm.
Drying by dryers only takes about 6-7 hours. In one day, we can 2-3 batches. Large dryer can dry a few hundred kilograms a batch of drying. The process is safe, closed, ensuring the strictest hygiene and safety standards. This is also the method of processing black pepper in factory nowadays.
White pepper
Black pepper is better than white pepper in term of nutrition, but white pepper is harder to process than black pepper.
In Bangka Island, the pepper is harvested when their bunches are 50-60% ripe, the fruit is put into bags, compacted, tied and soaked in water.
After 6-10 days of soaking. The peppercorns are soft, and can be separated easily. filtered out the stem and miscellaneous impurities. Subsequently, we put them outside for drying. The freshly washed pepper is gray, but when dried. they will have milk white color skins.
In India, people keep green peppers for several days and wait until they are ripe thoroughly. Then they soak them in fresh water for 6-12 days. They change the water daily; then rubbing between the two coconut fiber rugs to remove the shells of pepper, then the peppercorns are put outside for drying.
In Cambodia and Vietnam, we process white pepper from black pepper as follows: select the large ripe red pepper (4.5-5.5mm), ,then we put them in a bag in fresh water from 10-15 days with continuous water change. When the outer shell is swollen, soft and we put them in the machine to remove the shell. Then we wash and dry them again.
How to grind black pepper

It is not recommended that we use ground black peppercorns products to eat. In order to fully enjoy the delicious taste of a dish, you should grind black pepper manually in order to eat the freshly coarse black pepper.

Making coarse black pepper
The main purpose of grinding roasted pepper is to reduce the size of the pepper; breaking the inherent structure of the roasted pepper.
In addition, it also creates conditions for some types of gas, water vapor emitting during grinding.
Grinding pepper process is also very important. It directly affects the quality of pepper powder. If your pepper machine is not good, the pepper is hot and loses oil … Then the quality will be reduced.
Pepper must be finely milled (or as small as required by the food processor) to produce minimum heat. This is also the answer to why pepper mills cost up to several thousand dollars.
The simplest way to grind peppercorns at home
Use Mortar and Pestle
This is the simplest way you can crush pepper. You can start by putting a little pepper in the mortar and use a pestle to pound it out. Initially you will get a little annoyed because the pepper can fall off the mortar. However, the more you do, you will get the hang of it.
Use Hammer
This is also a simple way to grind pepper. You just need to get a hammer, then put the peppercorns into a high quality cloth bag or put between two pieces of parchment.
Then use the hammer to beat the bag. Remember to try to beat evenly so that the size of peppercorns is consistent.
Advantage: This way can grind a large amount of pepper and does not cause the heat and unpleasant feelings.
Use a rolling pin
You use a roller.
Use thick plastic bags or parchment Roll the roller on the bag to crush the pepper.

Tips for Coarse black pepper Selections.
- The level of moisture release and color of pepper powder depend on the size of pepper powder after grinding.
- In the process of milling, water vapor, CO2 gas and evaporated oil essences will be released.
- The process reduces the aroma of pepper due to the loss of some substances, so you should use as soon as the pepper is ground to ensure the best quality.
- If you have not used it at all, you need to store it in a sealed bottle, glass jar with multi-layer lid, avoid contact with air.
- Store in a cool dry place.
